Scottish Puff Pastry

I am not a very good baker. My new job requires that I become an expert in Scottish Puff Pastry. I have tried Julia Childs recipe, the French method, with good success. Now I need to master the Scottish method. My Scottish ancestors have all passed away. None of the cooking schools in T-dot are offering courses in this sort of thing.
Does anyone know of a restaurant/bakery/cooking school in Toronto I can visit to observe/absorb the techniques of Scottish Puff Pastry?
