I like the paninis at Mercatto on Toronto Street. My fav is the grilled chicken with brie and pesto.

Haven't been there in a while, but Boccone (Yonge & St. Clair area) makes a mean panini...

Dropped by to try Cafe Doria - but you failed to mention that the prices were MUCH higher than at Boccone (20 minute walk North, just south of St Clair).
We can always cite personal preference on the food (I still prefer Boccone) but the price differential is HUGE. $4.95 at Boccone; $7.95 and $6.95 at Cafe Doria. And the cappuccino is similarly much cheaper at Boccone.

I really enjoy the Panninis at Terroni. They have a really good selection in terms of toppings.
