Breakfast Sausage Recipe?
Anybody have one to recommend? I have some ground pork and am thinking of making sausage and egg sandwiches for dinner
would like something with sage, fennel doesn't go in breakfast sausage does it?
Agreed with the addition of Nutmeg and a bit of Sugar.
For 1 Pound of Ground Pork (at least 25% Fat)
2 tsp. Kosher Salt
2 tsp. Ground Black Pepper
1 tsp. Red Chile Flakes
1 tsp. Sugar
1 T. Minced Fresh Sage/or Dry Rubbed
.25 tsp. ground nutmeg
Optional Dry Ginger, Ground Coriander and/or Allspice .25 tsp.
Nope. No fennel in breakfast sausage, not in my experience, anyway. Fennel in Italian sweet sausage, absolutely.
Thanks for the help, I made some sausage patties and they came out pretty well
1/2 lb pork
about 1.5 tsp sage
little bit of oregano (I didn't have marjoram)
bit of thyme
(would have used a bit of nutmeg but I didn't have it)
a little bit of cayenne and red pepper flakes
about 1 tbsp brown sugar
they came out very nicely-appreciate the advice
