Salted cucumber water?
Had a fantastic cocktail yesterday made with Bulldog gin, Giffard Abricot du Roussillon, lime juice (I think) and "salted cucumber water!" Any ideas about how to prepare this last ingredient? What I loved about the cocktail was that it had great balance, and not too sweet. Very refreshing!
There are two ways that come to mind. You need to use English or other non-bitter Cucumbers.
First like making an Agua Fresca, peel and puree with some Water and and Salt to taste. Strain out the Solids.
Second, coarsely chop and sprinkle with Kosher Salt, place in a Colander and collect the Water that is extracted. You will have less control of Salinity with this method
