Speculoos/ Biscoff cookies vs ginger snaps

Please enlighten me on the difference. I know the former are Belgian and Dutch in origin and have patterns on them but is the taste that much different? Maybe ginger snaps have a more pronounced ginger flavour?

  1. Exactly it.

Ginger snaps have a decidedly ginger flavor, whereas speculoos are more cinnamon and have a "sugar and spice" feeling. For as much speculoos as I've eaten, I've never made them - so I don't know if there's any ginger in the recipe - but if there is, it's much more of an accent flavor.

Speculoos do have ginger in them but yeah, it's not the predominant flavor.

    2. Hugely, vastly different flavors.

The top flavor in speculoos is cinnamon, but it's in a blend of lots of spices.

Compare a couple of recipes -- you'll see it right away.

      1. If I'm not mistaken, speculoos are also quite a bit more buttery than ginger snaps, which are kinda dry.

no, speculoos are thin and crispy, too.

Oh. Then the ones I have had must have been fantastic bastardizations of the original! Crispy, but rich and buttery too.

        2. It's specula, the plural of speculum, not speculoos.
