Coconut/egg combo?

A girlfriend of mine always makes her eggs with coconut oil. The thought of coconut and egg grosses me out completely!! But apparently it's a very popular melding of flavors. Anyone do this?

    Not just coconut oil, but I also mix desiccated coconut with egg and make pancake disks.

    1. Coconut flan and custard are delicious.

      2. Yep. Coconut oil is my cooking oil of choice.

        1. Kaya is a coconut egg jam from Singapore/Malaysia. Amazingly good stuff.

            I keep meaning to try it and it's all over the place here (I'm currently in Malaysia, was in Singapore before that, so, uh, yeah). I think I'll just have to order the stuff and be done already. :)

              Kaya toast, soft boiled egg with soy sauce and kopi. Breakfast of champions!

          2. Some coconut oils have no coconut taste, others do.

              you can buy refined organic coconut oil which has no flavor, but still all the bennies. i mostly use that since i don't like everything to taste like coconut. especially scrambled or fried eggs. yuk. coconut custard is something else entirely.

                I feel like coconut custard or cream (like a creme brulee or a pie) is totally different than just making regular eggs in coconut. Dessert stuff sounds OK. Everything else sounds gross.

                  Sri Lankan curries are cooked in flavourful coconut oil and, I gotta tell you, they rank among the best food in the world to me. The coconut oil gives it a fantastic flavour that complements the rest of the dish.

                    I have such a weird thing with eggs…..I LOVE deviled eggs, hate most breakfast eggs (i.e. runny yolks) and get really weird about them in most dishes… I love quiche, but hate creme brulee…don't really like custard pies, but love panna cotta...
