  1. Did you look at Zagat's 30 under 30, Eater's Young Guns, StarChefs Rising Stars? New York Times?

Even if they have moved into other projects, it is a good starting point.

I've seen eaters young guns, but none of the others. So thanks for that, its definitely a start.

    2. Wylie Dufresne is definitely one of the most creative.
Recette's Jesse Schenker proves his creativeness on the second Monday of each month at Recette. He creates amazing creative dishes.
Cesar Ramirez of Brooklyn Fare, a very creative skilled chef.
David Santos of Louro is quite creative.
Chikara Sono of Kyo Ya is quite good.
Yamata-san of Brushstroke, who has years of experience at the famous Kitcho in Kyoto, shows quite a bit of creativity.
Of course Jean-Georges Vongerichten, Thomas Keller ( so amazing), Daniel Humm ( EMP), are truly amazing
For Sushi Gari-san deserves much credit for being a pioneer in modern style sushi, Then there is Soto-san for creative small dishes, Morimoto is quite creative, Nobu created the famous jalapeƱo yellowtail ( probably his best dish).
I guess there are many more creative chefs, but I named a bunch.

Listed in the NYTimes article by Pete Wells, linked above, Ignacio Mattos is on our regular rotation. Kudos to Estela, to Mattos, and to supreme waitperson James.
