What Can I Make with Honey Roasted Peanuts?

Normally, a can of honey roasted peanuts is gone in a few days, leaving me with a tummy ache and wondering why I couldn't stop eating them.
This time, they are kinda meh... not enough sweet, plenty of salt, okay on the peanut taste.
I found cookie and peanut butter recipes, but what else can I do with them? I'm going to chop some up to put on the vanilla ice cream DH made today, and swirl it with a little salted caramel syrup.

But I've got over a pound of honey roasted peanuts here to use. Any ideas?

          and not just brittle - spicy chili-garlic brittle with hits of lime! no not sriracha, unless you simply have no choice (and on that I can commiserate)

        2. I bet it would make awesome peanut butter. You could add some agave to make it sweeter if thats your preference.

            Believe it or not, we have four or five jars of various types of peanut butter in the pantry. So I'm looking for something else.

            I just had a thought.... apple season is coming up. I could do a taffy apple salad (if I can find a good recipe). I've had it years ago, but never made it.

          2. Add them to Thai or Vietnamese style dishes. Something easy would be to make a slaw of napa cabbage, shredded carrot, cherry tomatoes, and mint, dress with lime juice, fish sauce, and a little chili, and top with chopped peanuts. Or whatever vegetables are handy and go together.

            1. Roughly chop and add to salads, yogurt, oatmeal, mix into cookies, use as garnish for curry, mix into melted chocolate and let cool for chocolate bark, use in the fall for caramel apples you roll in the crushed nuts.....

                The crushed peanuts were perfect on DH's vanilla ice cream tonight. I drizzled on a little salted caramel syrup and some bittersweet chocolate syrup. That was excellent.

                1. I would try making peanut flour out of them, then use that in baking.

                      Now, I'm craving ice cream with a ton of honey roasted peanuts, gobbs of chocolate fudge sauce, warm, with French vanilla bean ice cream..
