Chicken Soup Problems

I'm trying to make Tom Kha Gai soup in my slow cooker. There is a weird grainy/fatty substance that's been gathering on the top. It looks like ground chicken, but I didn't cut the chicken up that small.... any ideas/suggestions?

    It's just schmutz- proteins and such.
    It won't hurt to have a little leftover- it just doesn't look nice.

    1. Without knowing what you put in it, it's hard to say. If you put the chicken in raw, it's probably the chicken scum that needs to be skimmed off.
