What should one definitely try in Portland?

I am hoping to finally get a chance to go up to Portland somewhat soon. I am pretty much dying to eat at Pok Pok, and Sen Yai because Night + Market in LA is one of my favorite restaurants ever. But other than that, what are places that are doing things that are unique to Portland? What ought one not miss while there?

The last time I was in Portland was probably almost a decade ago, and I ate at a place called the Gilt Club in a kind of seedy-seeming downtownish area. I had my first beef tartar with quail egg, and lamb burger. It remains a great memory. Is that place still open out of curiosity?

    I would suggest Biwa, Little Bird, Portland Farmers Mkt Saturday morning at PSU.
    Also suggest you read through a few recent extensive visitor reports on more recent openings, and form some more specific questions based on that wealth of info.
