Who sources the noodles at Bay Area Ramen shops?
Eater just published a long (and interesting) article on Sun Noodle and its impact on ramen in the US.
"Inside Sun Noodle, the Secret Weapon of America's Best Ramen Shops"
It pointed out that 9 of 10 of Pete Wells' top ramen joints in NY had their noodles custom made by Sun.in its New Jersey factory. (Ippudo makes their own).
They followed up with an article:
"29 Ramen Shops Serving Sun Noodles Across the US"
Eater pointed out the many ramen shops do not want to divulge their sources. With that caveat, not one of the 29 ramen shops named are in the Bay Area.
Are Bay Area Ramen shops just coy, or is there a closer acceptable source than Sun's Rancho Dominguez factory?
Nippon Trends food service markets the "yamachan" ramen sold at japanese markets and ranch 99. they also make noodles for the institutional trade. Nishimoto Trading is one of their distributors.

ramen shops differ in what noodles are used: some use chow mein-type noodles, or instant ramen from korea, or yamachan type instant noodles, or fresh yamachan noodles, etc.
Sapporo Ya in the Japantown mall makes their own noodles. Their dashi isn't delicious but I do like their fresh noodles.
"Wouldn't need to make their own noodles" points to one of the reservations I have about ramen as a noodle soup form: the noodles themselves are almost an afterthought to the broth. In China, a self-styled noodle shop wouldn't have any business if the noodles weren't freshly made in house.
