Hand Pulled Noodles
Is there any place in San Diego to find hand pulled noodles - either in a restaurant or to take home.
When I think of Liang's (which perhaps might not be often enough), I think of relatively intense soup flavors (for Chinese). That's been my impression, anyway. A good spot.
But hand-pulled noodles? That's pretty labor-intensive. I had no idea.
Now I'm anxious to return and focus on that.
Not to get too technical, but Liang's noodles are probably more aptly described as hand-pulled then patted and not the more traditional hand-pulled and stretched.
Having made hand-pulled noodles quite often, it's actually not as difficult as it seems. And nowadays there are so many purporting to know how to make hand-pulled or rolled noodles that lots of places that sell them just aren't very good.
In fact, you're oftentimes better off going to a place that outsources its noodles as there are now quite a few vendors who are doing really superb "wet" premade noodles that are as toothsome as some hand-pulled noodles.
