Shrimp Ceviche Help!

How do I get it to not be so Limey! I put olive oil in the marinade but still too much lime flavor. When serving shall I drain out all or most of the marinade?

  1. Drain out most of the marinade, not all. You want the ceviche to remain, and look, moist.

    2. I agree with draining out most of the marinade. One of my favorite shrimp ceviches in Mexico actually adds a bit of orange juice to the mixture as well. That would probably help.

        I read about that also. My only concern is I hear it changes the color and mine will be in a competition so I don't want that to get me docked points lol. Thanks so much!

      2. I always "cook" the shrimp in it's own dish of lime juice and then drain it and add to the rest right before serving- adding fresh lime juice to that mixture to taste if it needs it.
