Parsley oil

So I made some parsley oil. (I also made an oil with green coriander, which is nice and flowery, smells good.) Any suggestions on what to do with it? So far I have drizzled it on eggs, roasted potatoes, and freshly steamed green beans. Would it be too much for a salad dressing? I have about a cup of it and the recipe claims it's only good for a week. Any suggestions would be appreciated.

    How does it taste cold?
    Maybe an intense summer soup?
    How about a gelato/ frozen thing?

    How is it with fruit? Apple? Coconut?
    With Cream cheese on finger sandwiches?

    Use as the oil for a flavoured aioli?
    Marinate pork or beef bulgogi style?

    There's probably an aperitif usage, but I don't drinkā€¦

    Absolutely you can use it in salad dressings. I've also heard you can freeze it; given that it will only last a few days, if you're not sure to use it all, make up some ice cubes of it.
