I dunno about best, but the one at a Daniel is awfully good.
Minetta Tavern used to have a really good one. Haven't been back since the chef change, though.
Just had the Minetta Tavern version last week. Still excellent.
The one at the Four Seasons(the restaurant, not the hotel) is excellent.

Does Capsouto Freres still exist?
No. Anyway, my soufflé at Capsouto Freres was runny--entirely unacceptable--but I didn't say a thing. (Was with a friend and didn't want to make a fuss). Didn't return, though I'm sorry they were hard hit by Hurricane Sandy.
I'm interested in this too. I don't think I ever had a proper traditional soufflé.
