Gluten-free pancake mixes

Our family owns a breakfast place and we offer GF pancakes and waffles on our menu. We started with a mix from an expensive local source (Grandma Ferdon's) but a lot of less expensive mixes have appeared on the market lately. The prices are all over the map, and the quality varies noticeably, so I'm wondering if any of you have tried a brand mix that you really like, or if I should try making my own mix. Your thoughts?
i think it really depends on what you're aiming for with your customers.
do you want a GF mix that tastes closest to regular pancakes, just for the GF crowd?
would you want something that is GF but has a taste/flavor all it's own? if so, there are tons of options such as ricotta or cream cheese pancakes, etc.
also are you looking for a multi-tasking mix, that will do both pancakes and waffles?
if not, i used to get a yeasted corn batter waffle at a breakfast joint in boston that was soooo good.
offering things that are naturally GF could really open up options for all your customers.

Grandma Ferdon's pancake mix
INGREDIENTS:WHITE RICE FLOUR, POTATO STARCH, TAPIOCA STARCH, SUGAR, BAKING POWDER, KOSHER SALT & BAKING SODA.
In other words, a mix of non-wheat starches plus the usual pancake ingredients.
A lot of GF mixes combine starches with gums (of various sorts) to emulate the binding power of gluten. Pancakes use eggs for binding, so can get by with just the starches. In you also want to be vegan you might have to use egg substitutes like flax. Oat flour (and barley) also has a soluble fiber that acts like a gum.
I've used Pamela's with decent results. You might try it for a start. I've heard good things about King Arthur and Bob's Red Mill, too. Haven't tried them. Another product getting good buzz is the Cup4Cup brand of mixes.
