Bar La Grassa Chicken

Finally got a chance to try this. Wow is it delicious! Any ideas how I can make it myself? My guess is it's brined, butterflied, pan fried with the skin side down, maybe covered with a heavy weight to keep it flat, and then finished in the oven. Am I close?

  1. I've never had the chicken - in fact I've never been to Bar La Grassa - but it sounds like it may be a variation on the Zuni Cafe chicken recipe. Google it - it's everywhere.
