Disappearing Copper

Bought 6 (expensive) copper canele molds in Bordeaux last month. Went to season them today, a la Paula Wolfert (coat w/shortening, put in 350 oven for 1 hour). All of the copper disappeared. Any ideas as to what happened?

I had seen that thread also. Funny that something rather esoteric happened twice to CHs in such a short period of time. Glad there's an easy fix.

        Bizarre. I didn't bother doing a search, figuring this was a one-off.

Did yours turn silver like mine? Or a different colour? :P

Ah ok, exactly the same problem then. Good to know it isn't actually a "problem"!

      2. Copper often changes color upon heating. I think that if you were to try to scrub it with a copper cleaner, the copper "color" would come back. Don't do it though, it will ruin the seasoning.

The seasoning in on the inside (tinned) surface, not the exterior surface.

        2. Asked this on the other thread as well. - Are they tinned inside? If there's some zinc in the tin coating, it could make whiten them temporarily.

OT but I thought you already had a set, maybe two?, that you'd not used???

They are the "wrong" size. I wanted the big ones, as they bake longer, so get darker than the little guys.

          1. What brand are your molds by the way? And how heavy are they?

If you ever need to add any, BBB has them for $30.

J B Prince usually has the best price on these, at least for new and sold in the USA.

If you find yourself in France again and want more molds, try looking around any big Leclerc supermarket, I found my cheap copper molds there for just over EUR17 per pack of 3. The brand is Flaf Fiber.

Thanks for the tip. That is certainly an excellent price.
