Soaked Beans all day, Can't cook tonight.....

Just a quick yes or no.....
I found out I have to get up at 0400 and be at work at 0500 tomorrow morning.....
Right now, I am just not inclined to cook the beans I have soaked all day today.

If I drain them and put them in the fridge, can I cook them tomorrow when I get home, or ???

    1. Yes. You can also drain, freeze, and cook at a later date.

              1. I'd just change the water and let them soak another 23 hours. The longer you soak them, the less gaseous the end result will be - the suggested soaking time is a minimum, not a maximum...

                  If under refrigeration, I agree. But according to Jacques Pepin, they can start to ferment on the counter in warmer weather.

                    Yeah and they definitely will. I leave dried chick peas soaking in water on the counter for 2 days in order to get lots of bacteria going in the water for my students to view under the microscope.

                  2. A bit late to this, but soaked, uncooked beans are great to have in the FREEZER. They can ferment and sour in the fridge if you don't get to them in a timely fashion (I know my plans always change on a daily basis).

                      You can also leave them in water to continue soaking until tomorrow evening.
