Waioli fried chicken

Does anyone have a recipe for Waioli fried chicken?

  1. No, and the Web doesn't seem to have one either, but I did turn up a reference to a cookbook that purportedly contains it, which IS available from Amazon and other vendors:
    The Tastes and Tales of Moiliili, by Muriel Miura Kaminaka.

    I've never heard of this recipe, what's so special about it?

      I was looking for a different recipe and kept coming upon this dish. Made me curious but I couldn't find the recipe. Hopefully someone has it so I don't have to buy another Hawaiian cookbook. I already have dozens!

      You might try asking Peter at Kaua'i Family Restaurant in Seattle. His recipe is killah, "borrowed from his parents-in-law from Lawai'i, southshore Kaua'i.


      1. I tried a search for the Waioli Mission House in Hanalei on Kaua'i to see if they have a cookbook. no luck.

        How do you know the Waioli fried chicken?

        1. Marinated in shoyu, minced garlic, and ginger then fried. It splatters like crazy but so Ono.
