Question About Shallots

When a recipe calls for shallots what does that mean in terms of size. When you go to the store shallots can range in size from a large olive to almost as big as a ping pong ball

    I believe that recipes are typically referring to one "medium sized" shallot. So when you cook with garlic, the same can be said--some cloves are a centimeter wide and others are a full inch. If a recipe called for 3 cloves, I'd use 3 medium ones, or 1 little and 1 large.
