Favorite vegan coleslaw?

My usual slaw is mayo-based but this time I need one suitable for a vegan friend. Any favorite recipes out there?

  1. Oh, absolutely. You could do a North Carolina-style slaw.

    1/4 cup apple cider vinegar
    1/4 cup malt vinegar
    1 Tablespoon brown sugar (can sub 2-3 Splenda packets)
    Cholula or Frank's Red Hot to taste (1-2 tsps.)
    Salt and pepper to taste
    Small head of cabbage julienned/chopped (1-2 lbs)

    And, my SIL's addition---squeeze of fresh orange juice from a halved navel orange, and 1/2 cup finely chopped Vidalia onion. Mix the vinegars, Cholula, OJ and sugar, toss with the chopped cabbage and onion, add S&P to taste and let set.

    1. Cabbage, roasted cashews, dressed with coconut milk and apple cider vinegar.

      1. Veganaise is a great vegan mayo, be sure to get the original with the blue cap:

        I liked this one, i left out the peas because i thought that was weird in coleslaw and i toasted the walnuts and gave them a rough chop:

        1. not an exact answer to your question, but:

          if you have a whole foods near you, they carry on the GROCERY shelves (i.e. it's shelf stable--NOT refrigerated) a product that they call "vegan mayo" it is their house brand, the 365 brand.

          to my palate it tastes better than the refrigerated brands . better than veganaise, and better than the Earth-whatever brand of vegan mayo.

            Good to know! I very rarely buy mayo but when i do its for the summer months, i'll try this one next

            1. I found this recipe for white-bean burritos awhile ago.
              You can take or leave the white bean-burrito concept, the best part IMHO is the red-cabbage; simply stop at the carrot or cilantro ingredient.

              1. I love this Emeril salmon burger recipe...but the simple asian slaw that goes with it is really quite delicious and I frequently make it stand alone as well:

                but really, if you want to use your usual recipe, Veganaise will really not be noticeably different in cole slaw, with all the other seasonings and all.
