Gingered Apples or Pears
Fresh Ginger Root combined with apples or pears make a delicious side dish or dessert. After thoroughly cleaning the fruit and removing stems and seeds and bruised sections, I cut the fruit into bite-sized pieces. The ginger root is peeled, then either thinly sliced or grated - for six good sized apples I use about a 2"x1"x1" piece of ginger - add more or less according to your taste. I add the juice and sometimes the zest of a small lime, and sweeten to taste. Sometimes I also add cinnamon or allspice or ground clove for flavor. If I am cooking something in the oven, I cover the cooking container with aluminum foil and cook until soft - 45 min to 1 hour. Normally I nuke the fruit for 5 min, stir, re-nuke for another 5 min, stir, then add dried or fresh berries and nuke for a final 5 min (berries add color and flavor). Occasionally another 5 min nuke is needed if the apples are really hard. Serve hot or cold. We usually enjoy this cold for dessert with yoghurt.
