kale salad recipe

Looking for a recipe using kale,broccoli ,black beans and corn.Anyone with a recipe that they will share?

    More seriously, if I had those ingredients on hand and wanted to make a salad of them, I'd probably blanch the broccoli and chill it, then grill (indoor pan or outside) the corn and, briefly, the whole kale leaves. Corn and black beans makes me think of something with some Mexican flavors, so I might also grill some onion to toss in, maybe a bell pepper, and use red wine vinegar and olive oil as the base of a dressing. (Garlic can be added too, I'd probably also throw it on the grill pan first to soften/sweeten it, especially as I can't eat raw garlic!) A little shredded cheese perhaps, too.

      Also add some chopped fresh cilantro, and a squeeze of lime, and that's what I call a salad!

        If you cut the kale in thin slices, add some salt and "massage" it will incorporate nicely into the other ingredients.

            I like this southwestern vinaigrette with salads like this:

            2 tsp chili powder
            1tsp onion powder
            1 tsp cumin
            2 T cider vinegar
            3 garlic cloves, minced
            1/4 cup lime juice
            1/4 cup spicy ketchup or sriracha
            1.5 T honey
            s&p to taste

            combine garlic and salt on cutting board and mash to a paste. Add to other ingredients except oil in a bowl and mix well. Stream in oil & whisk until smooth. Yield: 1 cup dressing.

            Or, to keep it really simple, olive oil, fresh lemon juice, red chili flakes and some honey. One of my favorites with a raw kale and brussel sprout salad w/ raw almonds and currants. Finish it with shaved pecorino romano and cracked pepper.

                This also made me think of Mexican flavors. There's a dressing that I like on a green bean corn salad. Basically, garlic, shallots, cilantro, jalapeño, avocado, olive oil, cider vinegar and blend everything together. You end up with a creamy dressing that has tons of flavor.

              2. Right now prep the kale, take off the stems and slice super thin.
                Make a basic vinegrette with lemon (or whatever acid) and good olive oil and salt- and then really massage it into the kale, rub it together and squish until the kale is nearly 1/3 less the original volume.

                Its best to cover and let rest in the fridge at least and hour but its even better the next day (and will keep for several days!)

                With what you have on hand if the corn is fresh and sweet then just cut off the cob and add to the salad raw, otherwise roast with the broccoli with some herbs/spices- i like to add a little olive oil, black pepper, smoked paprika and salt, or instead just the oil with pepper and salt and sprinkle basalmic or malt vinegar over and roast until deep brown and carmelized.
                Toss everything together, add in chopped nuts or avocado with the greens and black beans.
