Vegetarian Culinary Schools

I've been searching for culinary schools that are worthwhile and friendly to vegetarians. To my delight so far I've found these:

1) The Natural Gourmet Institute in Manhattan (I've drooled over this one for a while)

2) The Natural Epicurean in Austin, TX

Do you know of any others? Especially schools that are more professionally geared and rigorous? Do you have any opinions/experiences/anecdotal commentary about the two I've listed?

Yes, I've seen that they include some seafood/poultry. It's not ideal but it's a start. At least the bulk of the content would be more relevant when compared to a traditional culinary program. I see some interesting vegan/vegetarian chefs coming out of Natural Gourmet so I'm intrigued.

    2. The one I'd heard about years ago and would still like to visit is Cordon Vert which offers a Diploma for professionals. http://www.cordonvert.co.uk/cv08/cv.a... This is only a five day course - so it's not comprehensive.

I would love to take the Indian Master Class. If only....
