My kids want to cook for me from Land of Plenty. Can you suggest?

My kids want to cook for me for Mother's Day. They are thinking of doing something from a copy of Land of Plenty which they will borrow. They are already thinking of making her General Tso's Chicken recipe. What else can you suggest? We can't do tofu or tree nuts due to allergies. Thanks for the help!

    Land of Plenty was focused on during the Fushia Dunlop month for the COTM (cookbook of the month).

        I love ants climbing a tree! I'm going to have to make that soon.

        The kids made me General Tso's chicken served with some stir friend peapods and baby mustard greens on the side. Plus rice and some buns we picked up at the local Asian market.
