Dinner Report: Taberna Gastromaquia, 22 April 2014

Lynn and I were TRULY blown away by the meal we here . . . in what can only be described as a little (tiny!) 24-seat hole-in-the-wall place no one would ever give a second glance to . . . We had an extraordinary Salmorejo con huevo y jamon (think gazpacho's thicker, richer cousin); one of the best renditions of tuna tartare I have EVER had; a "cylinder" of foie gras, completely encrusted in tiny crumbs made of corn nuts (sounds weird, I know, but it was fantastic!); pulpo (octopus) con espuma de patata that was simply stunning; delicious pintxos of cumin-scented pork; and a mojito sorbet that was sublime . . . OMG!

We can't wait to go back and order the dishes that we missed on our first visit.

(Of course, later, we learned that Hugo trained at El Bulli, then with José Andres for years in both the States and here in Madrid, and speaks English, French, Italian, Spanish, and Catalan . . . and who knows what else!).
