Houston's, R&D, and PDM all have pretty good salads IMO.

ARC also has some nice salads. As does the salad place that is also located at SOCO (the name escapes me - sorry)

These are all good spots for entree salads. They are very similar types of fast casual where you order at the counter. Greenleaf gives you a number and they bring you the salad. Tender Greens and Urban Plates are car wash like where you order your salad and watch it being assembled behind the glass.

          Tender Greens at the Spectrum
Greenleaf Gourmet at SoCo and 17th Street in Costa Mesa
          Urban Plates in Irvine

I was underwhelmed with Tender Greens. It wasn't bad, it just wasn't anything special.

It's a pretty expensive lunch. Salads and entrees are all above $10. I think its the best of the 3 I listed. The mashed potatoes are great prob due to the amount of butter. I enjoy most of their salads but it is just salad at the end of the day.

My wife loves the brown butter snickerdoodle cookie.

Not sure if this is what you're looking for, but I love Gỏi Hến (Manila clam salad) and Gỏi Mít (jackfruit salad) at Little Saigon restaurants that specialize in central Vietnamese (specifically Huế) cuisine, such as Quan Hy, Quan Hop, and Ngu Binh.

And as another poster (js76wisco) mentioned, Tender Greens has plenty of satisfying options.
