Burrito Art, I miss you!

DH and I used to frequent the Emory location at least once a week. It was so much better than the mediocre burrito joints that are around now.

I found the recipe for their red cabbage slaw on the BigOven recipe site. :). It made me want to recreate some of their burritos too.

It's been a long time and I'm trying to remember what was in those things. My favorite was the Mediterranean chicken. It was a big steamed flour tortilla+ grilled chicken strips+ tapenade, feta cheese and jasmine rice. Am I missing anything?

DH's favorite was the thai chicken. I know it had grilled chicken and jasmine rice and maybe peanut sauce. Anybody remember what else?

Does anyone have insider knowledge about how they made those great burritos? Any ideas of how to recreate them would be appreciated! :)

  1. I don't have any info on Burrito art but i do have a handful of recipes from Tortillas posted on my site ... google "Tortillas’ Long Lost Burrito Recipe" for the link.

    1. I think the thai chicken burrito had spinach and/or thai basil in it also. They published the slaw recipe in the AJC at some point, IIRC.

        Thinking about it more, I may be mixing up a Thai meatlof/meatball burrito with the chicken.

          Spinach, yeah. :). I have a pot of thai basil outside. Time to experiment!
