  1. With hot water, dish soap and a sponge scrubber.

Sometimes with specialized cleaner (for example bar keepers friend)

    1. bar keepers friend is the best..though I hate the smell of it.

      1. Barkeeper's Friend used to be my go-to when a soapy sponge wouldn't do the trick. Lately I've been having excellent results with plain old white vinegar. It beats BKF for all heat stains, whether rainbow blue or brown, and it excels at removing hard water mineral deposits from pasta water, boiled eggs, beans, rice, etc...

I pour in just enough to cover the bottom of the pan, let it stand for 10-20 minutes and rinse. It makes SS pans sparkle.

For abrasive stuff I use BKF, Comet, baking soda, whatever's handy. But when you're facing a pan of amber colored partially polymerized oil, nothing works like oven cleaner. The fume free stuff in the blue can. Leave it overnight. Works wonders when it seems sandblasting is the only thing left.
