Kid Friendly vegetarian ideas

My 5 year old is not a big fan of meat. He does like fish, however. I'm trying to find some new vegetarian ideas to add to our dinner rotation. Prefer ideas without pasta, as I've got that pretty well covered. And no egg based dishes...he won't eat quiche or similar dishes. He loves fruits and veggies.

  1. Edamame was always fun to eat at our house.
    Good source of non-meat protein. Very eater-interactive.

    Lentil patties also work well. Can be a great family cooking project.

      Do you have a lentil patty recipe you enjoy? I think those would be a hit.

        We used the Food & Wine red lentil patty recipe first time we made them:

        We now also do a pan-fried version. Have subbed other cooked/mashed beans/ lentils. Once you have a good mixture and feel for how things are supposed to feel/hold together it's hard to go wrong.

        Tacos and tostadas - perfect vehicles for all sorts of combinations of veggies, beans, cheese, salsa etc.

        2. My son loves falafal. Dipped in hummus or wrapped in a pita w/ Tzitzki.

          He also loves zucchini or sweet potatoe fries dipped in curry catsup.

          Couple others that are on regular rotation:

          Creamy cauliflower soup
          Black bean soup
          Veggies burgers
          Breakfast burritos
          Cold melon soup
          Roasted cauliflower dipped in raita
          Enchiladas or burritos made with black beans and cheese
          Potato and zucchini pancakes with sour cream

            This thread has some great ideas for veggie patties- i like a veggie patty ontop of a big salad with avocado and chopped veggies for a quick dinner, and i often use veggie burger recipes to make meatless balls i then use for tacos/salads/soup etc

            Tempeh is a great high protein whole foods option, use it cubed in your favorite stir fry, or crumbled in recipes like chili or tacos as a ground meat substitute.
