I'm not sure what you mean by a "dessert" cheese, since traditionally almost any cheese can be served after a meal.
There are a couple of ways you can go when pairing cheese with honey: you can choose a cheese that will complement the honey (firm and savory/salty) or you can choose something that will be more a supporting vehicle (mild and tangy/creamy).
I think it would depend on the characteristics of your honey as well. Light? Dark? Floral? Herbaceous? Citrusy? Fruity? Bitter notes?
All that said, I think a hard sheep's milk cheese (Manchego, Ossau-Iraty, etc.) goes really well with honey.
