Serve chopped or pulled pork shoulder, Boston butt, hams, or whole hog on the regular menu. Offering additional meats is acceptable -- and irrelevant.

Thanks for this link. we're headed to Charlotte in 2 weeks and DH wants true hole in the wall real deal cue. Needless to say, he's very excited about this list. :) Maybe we'll just skip the Mustang 50th at the motor speedway and just eat bbq!
