Cooked Pork Belly

Went to Trader Joe this morning, was tempted and fell for the cooked pork belly. But the recipes I was thinking of in Molly Stevens' braising cookbook are for raw pork belly. Does any chowhound know what to do with already-cooked pork belly?
I hope some of you will have yummy suggestions, because the idea of bacon that's more than bacon is so alluring!

    Twice Cooked
    Sliced Pork Belly with Cucumber and Garlic Sauce
    just to name a couple

    1. Cube it, heat it and fry to get crispy skin/fat

      Use it in a braise

      1. You can do similar things but most will involve heating and crisping the pre cooked pork belly and serving with whatever sauce of you choice.
