Birthday trip, three nights, dream food itinerary

It's my 25th birthday next month and I am heading to Las Vegas for three nights, four days (4/20- 4/23) with a friend. We are staying at The Mirage. I am a complete foodie and am a cook at a fine dining restaurant in Victoria, BC. I am also planning one brunch at Bouchon.

Out of these restaurants, which three would you choose for dinners:
Budget around $80 per dinner, per person, except for one tasting menu which could be more.

Heritage Steak by Tom Colicchio
Sage
Spago by Wolfgang Puck
Carnevino
Aureole
Picasso
Michael Mina

I have not included Joel Robuchon, as I have eaten at L'atelier in Paris a couple of years ago.

      I'm going back to Le Cirque for our upcoming trip, and they have a very nice pre-theatre menu for $72 a person. Loved Sage also. Scarpetta is really good too.

        We ate at Heritage Steak in January and had a really great meal. I'm still dreaming about the filet I had.

          Pass on Heritage Steak, Craftsteak is much better. Out of those, I would pick Sage, Picasso and Carnevino.

          Carnevino has the best dry aged steak in Vegas so if you like dry age definitely choose that steakhouse.

          Also, you might want to add Jaleo on your list for amazing paella. Or even Bouchon for dinner, I have had some incredible dinners there as well as great brunches. I would do both but that is just me.
