Opinions about Cello Copper Kettle Parmesan?
Costco carries Cello Parmesan.
Does anyone have opinions about this cheese, esp as compared with Italian Parmesano-Reggiano?

I've had the Cello Copper Kettle Parmesan from Costco. The flavor and texture are very different from a Reggiano. It is kind of sweet and nutty tasting to me, with a softer texture than any age of P-R I've had.
I do love P-R, but I also like Grana Padano, Asiago, and Pecorino Romano. They all have their own flavors and uses.
So I wouldn't use Copper Kettle as a substitute for P-R, but I do actually like the flavor. I eat it on its own, as well as grate it on dishes that seem right for its flavor.
My last wedge from Costco was $6.29 per pound, so why not buy and try? You can always return it if you don't like the flavor.
