Crawfish Crop

Well, I don't know if this is typical farmer poor-mouthing but I checked witih a friend whose brother does the rice/crawfish rotation and he said that while he had lots of "babies" in the field they weren't growing. Said that they won't be big for Lent and the price will drop dramatically after that so he is not looking for a good year. I'd have thought that by late April/May we'd have a decent crop with the ones that escaped harvesting in January and Feb. Fat content supposedly will be down, too. We'll see but I am steeling myself for a mediocre year.

  1. Had nice ones last week from the Restaurant Depot that we boiled. Price was very reasonable too.

      $5.99 boiled in Lake Charles last week, but they were fairly small.

        Beware that RD is selling whole, boiled IMPORTED crawfish from China. Chef Frank Brigtsen posted a FB pic a few days ago of pallets of cooked, shell on, imported crawfish out on the sales floor at RD. So if you're wondering about those boiled crawfish on the Asian mega-buffet, they're probably the most Asian part of the experience.

          A restaurant owner--who I will leave nameless--told me last week he expects most places in town will be using foreign crawfish in etouffee, stew etc just because of supply problems.

        1. I made etoufee with frozen tail meat from China tonight. I figured that many pretty good restaurants use it with some success. I threw out the batch. I hate doing good work that gets ruined by a bad key ingredient.

          I am in Iowa. God help me. Send the Gulf seafood truck ASAP.

              2. Had crawfish at Frankie & Johnny's three times last week and was fairly pleased. Of course they could have been bigger, and I would have preferred spicier, but still they were sweet and delicious. (Enough so that I went three times in one week!)
