Cajun crock pot

We've got a potluck Tuesday night and no free time that day. Any ideas for a simple and not too expensive crock pot meal that we could cook all day?

  1. crock or crack pot would work with a jambalaya recipe

    1. Barbecued Pot Roast****

      1 pot roast
      1/2 cup ketchup
      1 Tbsp vinegar
      2 Tbsp lemon juice
      1 teaspoon salt
      2 Tbsp minced garlic
      3 Tbsp oil
      1/2 cup beef stock
      1 Tbsp brown sugar
      1 Tbsp What's-This-Here-Sauce
      1 onion, sliced

      1. Brown pot roast on all sides in oil.

      2. Mix remaining ingredients and add to meat.

      3. Cover and cook slowly 3 1/2 to 4 hours until tender.

            Here is the one I've had:

            It really just depends on your tastes. That one looks really good too!

        1. Red beans and rice. Do the beans in the crock pot (add sausage if you want meat). Cook the rice separately. If you have a rice cooker with a timer, you would really be home free.
