Cajun crock pot

We've got a potluck Tuesday night and no free time that day. Any ideas for a simple and not too expensive crock pot meal that we could cook all day?

      Barbecued Pot Roast****

      1 pot roast
      1/2 cup ketchup
      1 Tbsp vinegar
      2 Tbsp lemon juice
      1 teaspoon salt
      2 Tbsp minced garlic
      3 Tbsp oil
      1/2 cup beef stock
      1 Tbsp brown sugar
      1 Tbsp What's-This-Here-Sauce
      1 onion, sliced

      1. Brown pot roast on all sides in oil.

      2. Mix remaining ingredients and add to meat.

      3. Cover and cook slowly 3 1/2 to 4 hours until tender.

          Red beans and rice. Do the beans in the crock pot (add sausage if you want meat). Cook the rice separately. If you have a rice cooker with a timer, you would really be home free.
