smelly pork roast

Our pork roast had a bad smell when we opened the package, is it safe to eat...and especially to smoke for pulled pork?

  1. Sometimes when I pull pork out of a cryovac package, it definitely smells off, but the 'smell' dissipates over the next few minutes. If it still smells bad after a little while out of the package, I wouldn't use it.

    1. Sometimes the juices that weep out of the meat into that little sponge like absorbent pad, start to turn before the meat.

      That is why it is important to rewrap if you are going to store for awhile.

      However, one should err on the side of caution, even if you cook it to well done....
