gelatin alternative agar-agar? -Cheese cake


i have a little dilemma. I cannot use gelatin due to religous reasons and cannot use kosher gelatin either. ive read that agar-agar is a good alternative. does anyone know how i would substitute it?

the recipe says:
Meanwhile, in a small cup, sprinkle the gelatin over the cold water and let stand about 2-3 minutes or until the gelatin has become soft and spongy. Add the gelatin to the warm strawberry sauce and heat (over low heat), stirring constantly, until the gelatin has dissolved.

  1. I've used agar-agar for vegan jello shots, and I have found the directions on my brand (Now healthy foods) for 2 Tablespoons per pint of liquid and then simmered for 5 minutes to set up way too solid.

    Since you have to cook it anyways, I would start with half the amount of agar agar you think you need, cause you could always add more and cook a bit longer.

    And checked out the link, that glaze might be my back up bandaid cover up if i get a crack in my cheese cake. Still figuring out this new oven . . .
