Which languages are spoken in Montreal's Japanese restaurants? French, English, or Japanese?

Generally, it's English and French. It's not a given that the people running the place will be Japanese.

I try to eat only Japanese-speaking places, but today the world has far more Japanese restaurants than a few decades ago.

Where would you suggest I go for great Udon? So far, the best one I've had is at Momoyama in the Cours Mont-Royal food court (under Paramount).

I also like to try and go only to Japanese speaking places, but it's hard to find them! :)

Sorry, I am not familiar with Montreal at all.
