Can I make goat cheese with evaporated milk?
Okay - I can't get a goat or a herd share. That's the first thing. A goat is impossible and a herd share isn't feasible, although I realize those are the best options for fresh goat's milk. Milk laws in my state are severe, and nowhere within a 5 to 6 hour drive sells raw or lightly pasteurized goat milk - all I can get is the ultra-pasteurized, which we all know won't work. But I found evaporated goat milk at a local grocery - which does not have the dreaded "ultra" word anywhere on it. Has anyone every tried this?
