What to do with Pomegranate Vinegar?

I bought a bottle of pomegranate vinegar from Trader Joe's to make salad dressings and for use in cooking. But I don't really have a clue what to do with it since I can't really find recipes using the vinegar--most recipes use cranberry juice + another vinegar.

I've seen some good ideas on this post:

But I'm looking for actual dressing/sauce recipes that branch from the normal vinegar + oil + mustard + dried seasoning.

      Except that wonderful thread asked for ideas except salad dressing. This OP is asking for actual dressing/sauce recipes using pom vinegar...if I'm reading it right.

    2. How about a creamy pom salad dressing?

      I mostly use the pom vinegar to pickle vegetables. I heat the vinegar up in a pot and pour it over cleaned root vegetables and let them marinate for a few hours.

      1. Oven roasted vegetables such as brussel sprouts. Try tossing the sprouts with the pom vinegar and maple syrup and evoo.
        Make a gastrique with the vinegar and honey. Use with seared pork.

        1. i made jalapeno jelly with my bottle of pomegranate vinegar. It knocked everyone's socks off. It was, and I'm not exaggerating, the best jalapeno jelly I had ever tried.

          Since I only had 1 bottle of vinegar I divided the ingredients by half, and I took the seeds out of the peppers
