Jose Garces' Volver to open in early April

Is it just me? I'm getting a bad vibe about this place. Seems like it should be located in an Atlantic City casino.

  1. This place would do well in NY.. unfortunately Philadelphia has either blue hairs who won't pay or people who want byo.. the concept is great.. too bad its not in Chicago. Mercato is my favorite of Garces restaurants.

Nothing about blue hairs or BYOB, it just seems tasteless to me. Hence my comment about AC casinos.

    2. I just wonder how often Garces himself will be present. I'm sure at first he will be there frequently, but at some point the rest of his empire will draw him away.

garces is such a joke. i have literally never seen him in one of his restaurants more than one week after they opened.

That's pretty much the nail in the coffin. I'd be interested in sitting at the counter if he was personally cooking, as was supposed to be the idea, but if he's already delegated it to someone else, I might as well go to Morimoto and hope himself will show up.

Can someone remind me why this guy is famous? When he was selected as an Iron Chef, which of his restaurants were already open (and which presumably his reputation was based on)?

Amada, Tinto, and Distrito were all open at that time. He had his celebratory party at Distrito.

I saw him expediting at Distrito for at least the first few months after it opened. Take that for what you will.

To Boognish's point we have also seen him at Distrito and Amada. "Such a joke" Really, with 14 successful restaurants and an Iron Chef award and taking on a much needed enhancement to the Kimmel Center we think not.

He has seven restaurants in Philadelphia, four in AC, one in Chicago, one is scottsdale and two in palm springs. Garces is a brand just like Bobby Flay, or other personalities. I saw Garces cooking at JG Domestic about a year ago, but I think there was a chef visiting him there.

He is big business. His restaurants are not chef driven restaurants by any means. I would never expect him to spend a lot of time at this venture at the Kimmel, as he has so much else going on.

Thanks for the edit on number of successful restaurant. I would not know what to expect from Garces. But I would give him some credibility and expect him to at least attempt do what it is he will say he will do.

i mean a joke as a chef, not a joke as a restaurateur. he changes his menus even less than, like, Continental! And, i mean, who knows how successful a lot of his restaurants are. Chifa closed, he basically gets free rent in the casinos, etc etc.
