Vegetarian Friendly Values in Las Vegas

My boyfriend and I are heading to Vegas for the first time at the end of March. He is a vegetarian, and I'm not.

We are looking for suggestions of the best places to eat in Vegas that will not break the bank and will be friendly to vegetarians (for example, more than one vegetarian entree choice). Dairy and eggs are ok for him, seafood and meats are not. We are willing to pay a little more for something truly excellent, but we also know even average Vegas restaurants are expensive.

We are open to any type of cuisine, and are interested in places that are both fancy and those that are casual. We are open to suggestions for breakfast, lunch and dinner.

At this point, it looks like we will be staying on/near the strip, but will have a car so could travel.

    How much are you looking to spend per person per meal?

      I think we'd like to keep it under $20 for breakfasts/lunches and under $30-40pp for dinners (not including desserts or drinks).

      We'd probably be willing to pay a little more for breakfast if it meant we could skip lunch!

      I'd call the hotel you are staying and ask about the breakfast buffet. We stayed at The Palms (got a deal) and I was surprised at the varied choices of their buffet.

      My unexpected fav thing? Sweet and spicy fried tofu. It was divine, really well made.

      It was not fancy, but it was awfully convenient and happily tasty.

      (BTW - this is not to say that you should stay at the palms! But many of the larger casinos have asian oriented choices that give you many more options, veggiewise, than you'd think.)

      Oh and BLT Burger at the Mirage was surprisingly tasty and they had decent veggie choices. Loved the fried pickle chips too.
