Substituting bone-in chicken breast for braised whole chicken recipe?

fldhkybnva Feb 3, 2014 02:11 PM

I am planning to try a recipe for braised chicken. The recipe uses a whole chicken but I have a glut of bone-in chicken breasts to use up. The original instructions are to cook at 375F for 90 minutes, should I estimate about half this time for just the breasts?

I would say even start checking them at 30 minutes... breasts cook pretty fast, even when they're bone-in.

I thought I might let the sauce cook for a while and then add them. I'll start checking at 30 minutes, it's a monster breast of course so I'm guessing maybe 45 minutes it should be done.

have the meat at room temp. brown all around and remove from pan. add whatever else is in the recipe and it to boiling on the stove, add back the chicken, bring up to a simmer and then put it in a 275 oven.

start checking at 30 minutes, yes.

Thanks. I let the sauce simmer for 20 minutes or so and then added the breast for 25 minutes. It worked great and the chicken was perfectly done.
