Just some ideas:
Hong Kong - Lung King Heen at the Four Season, Tang Court (frankly it's kind of tough to do Cantonese all by yourself, unless you go for the more hole in the wall places like Tim Ho Wan or Yat Lok or Joy Hing).
Beijing - Da Dong or Made in China at the Grand Hyatt.
Shanghai - 8 1/2 Otto e Mezzo Bombana.
So many GREAT Shanghainese food places in Shanghai, why Italian?! Will Bombana be cooking there?
BTW, I ate at HK's 8 1/2 OeM last summer with Bombana at the helm. And even that was not enough to 'wow' me. Food was good, but no way 3* caliber. More like 1*. Food was over-priced, underwhelming and plated very 'rough with an edge' for a 3* - almost canteen like!.
