are there preferences in location, (how far you are willing to travel) ethnicity, type of noodle (including diameter), etc.?

the reason for asking is that the more specific you are, the more helpful *most* of us can be in answering.

Just go to 101 Noodle Express on Jeffery. They have regular and hand cut options.

Also not sure if Lao Dong Beef Noodles are house made or not but they are al dente and have a slick texture superior to most average places. The broth is lighter which I like, especially the clear broth with brisket. Others are less keen on it and like the heavier version like A&J across the street.

From what I understand Zetton makes their own tapioca ramen for tsukemen. Order it cold if you get it. The noodles are chewier that way.

If you're in Northridge, stop by Mandarin Deli for spicy beef noodle soup with hand-made noodles. Make sure you pay the extra buck for the hand-made noodles. Get some potstickers and a beef roll while you're there.

              Marugame Monzo does udon.

              Yabu does buckwheat soba.

Mapo Kkak Doo Gee does Korean hand pulled noodles.
