Zuni Caesar Salad [San Francisco]
A mostly lovely meal @ the Zuni (our first since Judy Rodgers' passing).
Great rabbit, cassoulet, plate of fresh anchovies and cheese and olives. Wonderful service.
But the storied Caesar Salad disappointed--this time and the last few times. I really love the dressing (my husband thinks not zippy enough). Both of us like the croutons and the presentation a lot. But--fatal flaw--that sucker is over-dressed by half.
I don't think there's anything new about that, in fact, I think the heavy hand with the dressing is one of the things that made it so popular. The recipe in the book makes about 1-1/2 cups of dressing for 4-6 servings.
I guess it's a matter of personal taste. Four of us had it the week before last and we all thought it was perfect.
