Try Rumjungle at Mandy Bay and get the mixed grill ( rodizio). ESP if you are a carnivore, its a non stop orgy of griiled meats. The atmosphere is VERY sexy, food is great, service, a bit iffy. Gotta try a foo foo drink too!

Sounds like the Palms would fit your bill. You could go to either Little Buddha or Nine Steakhouse, depending on your mood. Then you could have cocktails up at the ghostbar.
The new steak place, Simon, at the Hard Rock is one of the new trendy places in town. Nobu is wonderful, too.
